Shrimp with Adobo Sauce and Polenta

Ingredients
  • 1 tablespoon olive oil
  • ¼ cup dry red wine
  • 1-1/2 tablespoons Worcestershire sauce
  • 1 to 2 canned chipotle chiles in adobo, minced, plus 2 to 3 teaspoons adobo sauce
  • 1 large garlic clove, minced
  • ½ teaspoon sea salt
  • 1-1/2 pounds medium shrimp, shelled
  • 1 cup dried polenta, cooked according to the package
Instructions
  1. Preheat oven to 400°F.
  2. Mix olive oil, red wine, Worcestershire sauce, chipotle chilies, adobo sauce, garlic and salt in a medium bowl.
  3. Toss shrimp with sauce and place in a large shallow baking dish.
  4. Bake in middle of oven until shrimp are just cooked through, 10 to 12 minutes.
  5. Divide polenta between four plates and cover with shrimp and sauce.
Notes
* Not in the mood for polenta? Serve with some good bread to soak up the sauce. Add a green salad for an easy meal.
* If you make less shrimp, still make the same amount of sauce as it's so good.
