Refried Black Beans
Author: Nicole
Ingredients
  • 2 15-ounce cans of black beans, drained and rinsed (see note)
  • ⅓ cup chicken broth
  • 3 tablespoons vegetable oil
  • ½ cup onion, chopped
  • 3 garlic cloves, chopped
  • 1 jalapeño pepper, seeded and chopped
  • ¼ cup cilantro, chopped
Instructions
  1. Place drained beans in a bowl.
  2. Using a fork mash them adding chicken broth as necessary – you are done when most of the beans are mashed.
  3. Heat oil in a 10-inch frying pan over medium heat.
  4. Sauté onion, garlic and jalapeño pepper until soft.
  5. Add beans to mixture and cook for about 10 minutes, stirring frequently. The beans will reduce to thick, crusty paste.
  6. Add chopped cilantro and cook for about another 2 minutes.
  7. Serve hot.
Notes
* Instead of canned beans you can cook up a batch of Dried Black Beans and use 3-1/2 cups of cooked beans for this recipe.
* Use vegetable broth to make this vegetarian.
