Beef, Ancho and Chocolate Chili

As the days get shorter and the weather colder I look forward to making one pot meals on Sunday afternoons. This means dinner that night and leftovers placed in the freezer for a future meal. [Read more…]

Pumpkin Surprise Mini-Cheesecakes

I knew that I wanted to make a cupcake dessert for a family pumpkin carving party we were going to last weekend so I went on a search for festive cupcake wrappers.  While looking for the traditional orange and black colors I came across ones that were far brighter and closer to the colors I love. When I looked closer I realized they were for the Day of the Dead. [Read more…]

Fava Bean, Apricot and Pistachio Rice Salad

I’ve always loved rice salads and particularly so when they’re made with flavorful rices. This one starts with wild rice and brown rice as a base. I used rice from two separate packages but you could use a pre-made mix. Using different rices provides not only more flavor but also more texture. [Read more…]

Green Goddess Potato Salad

Summer is winding down but if you’re like me parts of your garden are still going strong. I am happy to report that many of my herbs (thyme, rosemary, tarragon, mint and lavender) are still growing at a good pace. While I plan on freezing some of these for the winter, I also want to use them while they’re fresh. [Read more…]

Burrata and Tomato Salad

I was like a kid in a candy store this past Saturday at the Malvern (PA) Farmers Market. There were a few different stands selling tomatoes but when I saw that the Kimberton CSA (the first CSA in Pennsylvania) had sorted their cherry tomatoes into bins so you could make your own mixture I knew that I had to go to their stand. Gluten-Free Chocolate-Hazelnut-Cherry Magic Bars

There are many names for this confection – Magic Bars, Hello Dolly Bars or Seven Layer Bars. What they all have in common is some sort of ground-up cookie, chocolate chips, sweetened shredded coconut and condensed milk. This version is possibly the easiest to make as all of the ingredients (except the condensed milk) are combined in a bowl and transferred to a baking dish. [Read more…]

All Things Green Yogurt Sauce

Perhaps not all things green but close to it – six of 10 ingredients for this tasty sauce are green and fresh:  basil, mint, jalapeño, scallion and lime (zest and juice).  Throw in some yogurt, olive oil, ginger and garlic and you’ll have your new favorite sauce for the summer. [Read more…]

Orange-Almond-Polenta Cake

Having been wheat-free (or essentially gluten-free) for almost 18 months now I am more aware of recipes (particularly desserts) that are “naturally gluten-free” – meaning I do not have to make any adaptations to suit my dietary needs (or those of my growing group of friends who are in the same camp as me). You’d really be amazed at the number of fabulous desserts that can be made with gluten-free ingredients. [Read more…]

Raspberry Sauce

Do you remember those days in the 1990’s when “fat-free” was the food craze? Everything you could imagine came in a fat-free option. Thankfully this didn’t last too long as wise people realized that taking out the fat was not only bad from a processing standpoint but also typically added to the calories.  [Read more…]

Sweet Potato and Chestnut Soup

. to thIf I had a hunting lodge I would have this soup on hand all winter long. The flavors are woodsy and rustic – that’s what makes me think of a hunting lodge.   [Read more…]
