Cucumber-Mint Spiked Lemonade

Ingredients
  • ¼ cup cucumber, skin on and chopped up into small pieces
  • 2 tablespoons fresh mint leaves
  • 2 ounces liquor of choice (vodka, tequila, gin, bourbon, etc.)
  • 1 cup lemonade, preferably organic
  • Garnish with a cucumber wheel and sprig of fresh mint
Instructions
  1. In a cocktail shaker, muddle cucumber and mint to release juice and flavors. (Don't worry if your cucumber and mint measurements are not precise.)
  2. Fill the cocktail shaker halfway with ice.
  3. Add liquor (of choice) and lemonade. Shake for 15 seconds.
  4. Pour into a highball glass or stemless wine glass filled with fresh ice.
  5. Garnish with a cucumber wheel and sprig of fresh mint.
Notes
* Depending on the size of your shaker, you can likely double the recipe and prepare one batch in the same shaker.
* If you are making this for a crowd, you can muddle the cucumber and mint in a pitcher and add the rest of the ingredients and stir. I recommend adding the ice to the glasses, rather than the pitcher so as not to dilute the drink.
* This recipe can be made without alcohol – you can add it after the drink is mixed or enjoy it without alcohol.
