- 3 ounces fresh watermelon juice (see Notes)
- 6 mint leaves plus more for garnish
- 2 ounces vodka
- ¼ ounce Midori
- Sea salt
- To make juice, cut watermelon into large cubes and purée in blender or Vitamix until smooth. Measure out 3 ounces of juice.
- In a cocktail shaker muddle mint leaves with watermelon juice.
- Add vodka, Midori and a pinch of sea salt to shaker and fill with ice. Shake.
- Strain into a martini glass.
- Garnish with mint leaves.
* One eighth of a small watermelon makes about 1 cup (8 ounces of juice).
