Pomegranate-Ginger Mojito |

Syrup:
- 6 ounces ginger
- 1 cup granulated sugar
- 1 cup water
Cocktail:
- ½ ounce freshly squeezed lime juice (~ ½ lime) (see Notes)
- 1 ounce ginger syrup
- 10 fresh mint leaves (plus a sprig for garnish)
- 2 ounces white rum
- 2 ounces pomegranate juice
- Seltzer water
- Garnish with a mint sprig
To make syrup:
- Peel ginger and thinly slice.
- In a small saucepan, add ginger, sugar and water and bring to a simmer over medium-low heat. Stir until sugar has dissolved. Gently simmer, uncovered, for 30 minutes.
- Remove pan from heat and allow mixture steep for an hour.
- Strain through a sieve in a container and refrigerate until ready to use. Makes 1-1/2 cups. Syrup keeps for four weeks.
To make cocktail:
- In a highball glass, muddle lime juice, ginger syrup and mint leaves.
- Fill glass with ice and add rum and pomegranate juice.
- Top with seltzer and stir.
- Garnish with a mint sprig.
* Before squeezing limes, heat it in a microwave for about 20 seconds and then rub it back and forth on the counter top. This easy two-step process results in more juice per piece of fruit.
