In a medium bowl, mix together cheese, pecans, mayonnaise, onion, and cayenne pepper. Mixture should just bind together – add additional mayonnaise if needed.
Place a small bowl in the middle of a plate. Form a ring around the bowl with the cheese and nut mixture.
Place preserves in bowl just before serving. Serve with crackers.
Notes
* I do not recommend using pre-shredded cheese as a shortcut. Take a few minutes to grate your cheese.
