Instructions
Make Purée:
Add strawberries, lemon juice and sugar (if using) to a Cuisinart (small is fine), blender or Vitamix. Blend until smooth. Transfer to a container and refrigerate until ready to use. It can be prepared two days in advance. Makes enough for 5 to 6 cocktails.
Make Cocktail:
Add vodka, elderflower liqueur, strawberry purée and lemon juice to a cocktail shaker. Add ice. Shake for 15 to 20 seconds.
Pour through a small sieve (double straining) into a measuring cup. (This makes for a cleaner presentation.)
Pour into a wine glass filled with ice and top with sparkling wine.
Garnish with a mint sprig, strawberry and/or lemon slice.
Notes
You can use frozen strawberries, just thaw them first.
For a crowd, mix everything except the sparkling wine in a pitcher (skipping the shaker step) ahead of time. Pour over ice, top with bubbles and you’re ready for cocktails.
